One of the best parts about summertime is the abundance of fresh fruits and veggies found in each region! Our family loves having our own garden, it is such a treat to be able to see your meal go from garden to table.
Finding healthy meals to make can be difficult. A simple solution to quickly feed your family is to make a basic staple food and add a homemade topping to spice up your meal. This recipe for pesto is great for topping many different types of foods and makes for great leftovers.
Ingredients:
- 2 cups Fresh Basil Leaves (stems removed)
- 2 Tbsps. Pine Nuts
- 2 Large Cloves Garlic, minced
- ½ cup Extra-virgin Olive Oil
- ½ cup Grated Parmesan Cheese
Directions:
- Place basil, pine nuts and garlic in a food processor or blender and process until well blended.
- Slowly add in the olive oil and continue to blend until the mixture is smooth.
- Add the Parmesan and process again just long enough to blend it into the rest of the pesto. Store in refrigerator or freezer.
Note: I like to add this to any kind of pasta noodle and top with sautéed cherry tomatoes.
