Brown Rice Breakfast Pudding-FitKimThere are two awesome reasons to use this recipe for breakfast. The first is it is perfect if you have leftover rice from dinner and there is no way you can eat it all. I’ve even cooked it in broth and still used it to make this and it tastes yummy. And second, I know you get sick of oatmeal just like I do:)! Just replace the butter with coconut oil to make this vegan and it really is something everyone in your family can enjoy!

Ingredients
  1. • 1½ cups cooked brown Rice
  2. • 1 cup Milk (any kind)
  3. • 1 Tbsp. Butter
  4. • ½ Tsp. Cinnamon
  5. • 1 Tbsp. Agave (or honey)
  6. • 1/2 Banana, mashed
  7. • Handful of Raisins
Instructions
  1. 1. In a small saucepan, combine the brown rice, milk, butter, and cinnamon. Bring to a gentle simmer, stirring occasionally.
  2. 2. Stir in the mashed banana, agave/honey and raisins. Cook until liquid is absorbed.
